Black Bean Salad

A fresh black bean salad, excellent for a summer season outing or dinner. Red bell peppers, jalapeños, avocado, black beans and corn incorporated to give this salad its kick and fresh tastes.

What is it concerning a black bean salad that practically screams, «summer dinner«? The mercury has been edging past a hundred levels lately right here and I’ve been getting nostalgic for several of the picnic foods I remember having usually as a kid.

The fundamental framework of a black bean salad is black beans (tinned or fresh made) with corn bits (canned, frozen, or fresh). Parsley, basil or cilantro add an herby note to the tastes.

Tomatoes or red bell pepper some sweetness and also shade. Lemon juice and or lime juice some acid. Jalapeño or cumin will offer it a kick, as well as avocado and olive oil will certainly smooth it down.

I discover adding a little bit of sugar almost always helps stabilize the acid from the citrus and tomatoes, as well as makes for a much better tasting salad.

Obviously, this salad will be added great if you have newly prepared corn and beans available. If you do not, simply use the canned beans and also frozen corn (we used white corn here).
